Peach Melba

This is a very easy yet impressive summer dessert. If you wish, a bit of liqueur like Chambord may be added to the raspberry coulis. Canned peaches work fine. Poaching fresh peaches is a lot of extra work and the flavor isn't any different.

Ingredients

  • canned peach halves allow 2 peach halves per serving
  • raspberry coulis see separate recipe
  • vanilla frozen yogurt or ice cream
  • cookies for garnish

Instructions

  • Place 2 peach halves in shallow dessert bowl or plate. Top with a scoop of vanilla ice cream. Drizzle generously with raspberry coulis and decorate with a cookie.
