Peach Melba
This is a very easy yet impressive summer dessert. If you wish, a bit of liqueur like Chambord may be added to the raspberry coulis. Canned peaches work fine. Poaching fresh peaches is a lot of extra work and the flavor isn't any different.
Ingredients
- canned peach halves allow 2 peach halves per serving
- raspberry coulis see separate recipe
- vanilla frozen yogurt or ice cream
- cookies for garnish
Instructions
- Place 2 peach halves in shallow dessert bowl or plate. Top with a scoop of vanilla ice cream. Drizzle generously with raspberry coulis and decorate with a cookie.
