Cornish Hens with Plum Sauce
A nice alternative to plain roast chicken that is good enough for guests and easy enough for a relaxed home cooked meal.Based on a recipe from 5 Star Sensations, recipe by Janet Mahon, 1991, The Auxiliary of University Hospitals of Cleveland, p 168.

Ingredients
- 4 Cornish hens
- 1/2 cup plum jam
- 1/3 cup soy sauce
- 1/4 cup orange juice
- 2 cloves garlic minced
- 1/4 teaspoon crushed anise seed
Instructions
- Preheat oven to 375° F. Line roasting pan with foil for easy cleanup and insert rack.
- Discard giblets. Rinse hens, drain, and dry well. Place breast side down on rack. In small bowl, combine jam, soy sauce, orange juice, garlic, and anise seed. Baste hens with sauce, inside and out.
- Cover hens loosely with foil and bake for approximately 1 hour 15 minutes, basting occasionally. Remove foil and continue baking, basting often with the remaining sauce. Bake for an additional 15 minutes, until an instant read thermometer inserted in the thickest area of breast on the largest hen registers 165°F.

Pairs well with wild rice and steamed vegetables.
