Sun Dried Tomato, Pesto, Chicken Sandwich

- 2 large boneless chicken breasts poached, 3/4" diced
- 3/4 cup Pesto - Basil, Pine Nut
- 3 ounces sun dried tomatoes, moist packed julienned
- Italian or French bread, or rolls
In a medium-sized bowl, combine the chicken, pesto, and sun dried tomatoes. Stir until the pesto uniformly coats the ingredients.
Slice the bread horizontally lengthwise, add desired amount of chicken mixture and enjoy. Can be served warm or cold.
