SUN DRIED TOMATO, PESTO, CHICKEN SANDWICH

Sun Dried Tomato, Pesto, Chicken Sandwich

Ingredients

  • 2 large boneless chicken breasts poached, 3/4" diced
  • 3/4 cup Pesto - Basil, Pine Nut
  • 3 ounces sun dried tomatoes, moist packed julienned
  • Italian or French bread, or rolls

Instructions

  • In a medium-sized bowl, combine the chicken, pesto, and sun dried tomatoes. Stir until the pesto uniformly coats the ingredients.
  • Slice the bread horizontally lengthwise, add  desired amount of chicken mixture and enjoy. Can be served warm or cold.
