Smoked Turkey Sandwich with Mozzarella, Roasted Red Peppers and Gorgonzola Balsamic Vinaigrette

Ingredients
- 4 rolls baguette or multigrain bread works fine too
- 1/2 pound sliced smoked turkey breast
- 4 ounces mozzarella cheese sliced
- 1 large roasted red pepper sliced 1" wide
- spring mix or other lettuce greens
Gorgonzola - Balsamic Vinaigrette
- 1/3 cup olive oil
- 1/3 cup balsamic vinegar
- 1 teaspoon Dijon-style mustard
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 clove garlic crushed
- 3 tablespoons Gorgonzola cheese
Instructions
- Prepare salad dressing by whisking together all ingredients.
- Using a spoon, spread some vinaigrette evenly on the bottom slice of bread. Add sliced turkey, then mozzarella, then red pepper slices. Top with salad greens. Drizzle on additional dressing. Top with bread and enjoy.
