Salmon - Seared
This recipe is slightly more work and cleanup than simply broiling salmon, but the golden crust that forms when searing the fish yields a tastier result.
Ingredients
- salmon fillet with skin, 6 ounces per serving
- salt and pepper
- 1 tablespoon canola oil
Instructions
- Preheat oven to 350°F.
- Season salmon with pepper and salt to taste.
- Heat a cast iron skillet over medium-high heat. Add salmon, flesh side down, and sear until a golden brown crust forms, about 3 - 5 minutes. Carefully slide a spatula under illet and turn over. Transfer skillet to oven to finish cooking, approximately 6 to 8 minutes, or until salmon is almost opaque throughout (try to flake with a fork), but still moist. Try not to over cook.
Notes
Pairs well with a mixed green salad that includes vegetables like tomatoes, cucumbers, and peppers and a classic Dijon vinaigrette. Other ideas include roasted potatoes, steamed vegetables, ratatouille.
