Roasted Split Chicken Breasts

Ingredients

  • 3 large split chicken breasts about 3 pounds
  • 1 tablespoon olive oil
  • salt

Instructions

  • Position oven rack in top third. Preheat oven to 350°F.
  • Line a rimmed baking pan with foil. Place chicken breasts on pan. Brush both sides with olive oil and sprinkle with salt. Roast 35 - 40 minutes, or longer for large pieces, until center of chicken registers 160°F on instant-read thermometer.
  • If breasts are very large, slice meat off bone and place on warm platter to serve.

Notes

Pairs well with steamed vegetables and potatoes. Chicken can also be used for salads or sandwiches.
