Broiled Salmon with Scallions, Honey-Lime, and Chile Pepper

This is a nice alternative to basic cooked salmon that takes a bit more time but is worth it. Pair with steamed vegetables.

Ingredients

Marinade

  • 2 garlic cloves minced
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 teaspoons honey
  • 1/2 teaspoon sesame seeds

Remainder of Recipe

  • 3 skin-on center cut salmon fillets about 1/3 - 1/2 pound per person, evenly sized
  • 1 bunch scallions
  • 2 teaspoons vegetable oil
  • 1 Fresno chile pepper thinly sliced
  • sesame seeds for garnish

Instructions

  • In a small bowl, whisk together all marinade ingredients.
  • Place salmon in a resealable plastic bag; add half of the marinade. Press out air, seal, and marinate 30 minutes. Reserve remaining marinade.
  • Preheat broiler.
  • In a large cast iron pan, toss scallions with vegetable oil. Broil until lightly charred, about 3 minutes.
  • Remove salmon from marinade and set on top of scallions, skin side down. Spoon on some reserved marinade; broil until salmon is charred around edges, about 6 minutes.
  • Spoon more marinade over; top with sliced chile pepper. Broil until salmon is charred and medium - rare at thickest part, about 2 minutes.
  • Sprinkle with sesame seeds and serve.

Notes

While salmon is marinating, prepare the rest of your meal. 
Try lining the pan with foil for easier cleanup.
