Ingredients
4Cornish hens
1/2cupplum jam
1/3cupsoy sauce
1/4cuporange juice
2clovesgarlicminced
1/4teaspooncrushed anise seed
Instructions
Preheat oven to 375° F. Line roasting pan with foil for easy cleanup and insert rack.
Discard giblets. Rinse hens, drain, and dry well. Place breast side down on rack. In small bowl, combine jam, soy sauce, orange juice, garlic, and anise seed. Baste hens with sauce, inside and out.
Cover hens loosely with foil and bake for approximately 1 hour 15 minutes, basting occasionally. Remove foil and continue baking, basting often with the remaining sauce. Bake for an additional 15 minutes, until an instant read thermometer inserted in the thickest area of breast on the largest hen registers 165°F.
