Nut & Honey Granola
A good basic granola recipe that can be adjusted to suit one's tastes.

- 1/2 cup dark brown sugar
- 1/3 cup olive oil
- 1/4 cup honey
- 4 cups old fashioned oats
- 1/2 cup pumpkin seeds
- 1/2 cup pecans chopped
- 1/2 cup lightly salted sunflower seeds
- 1/4 cup roasted unsalted almonds chopped
Preheat oven to 300°F. Line large rimmed baking sheet with parchment paper.
In a 6-qt stock pot combine dark brown sugar, olive oil, and honey. Warm over low heat just until sugar dissolves. Turn off heat.
Stir in oats, pumpkin seeds, pecans, sunflower seeds, and almonds to evenly combine.
Spread mixture evenly on prepared baking sheet. Bake approximately 35 minutes, stirring several times. Granola should be lightly golden.
Remove from oven, if desired, stir in dried fruit. After cooling approximately 7 minutes, stir to break up chunks. Cool to room temperature before storing in air tight container.
