Salmon - Broiled
An easy method for preparing salmon. Serve with steamed vegetables, rice, or with salad greens and vinaigrette.

- salmon fillet 6 ounces per person (about 1 inch thick)
- olive oil
- salt and pepper
Preheat broiler. Line rimmed baking pan with foil for easy cleanup.
Place salmon, skin side down on pan. Brush with olive oil and sprinkle with pepper and salt, if desired.
Place pan in oven. Cook approximately 10 minutes for one inch of thickness, until fish is opaque but not dry and flakes easily when tested with a fork.
