Nut & Honey Granola
A good basic granola recipe that can be adjusted to suit one's tastes.
Servings: 8 cups
Ingredients
- 1/2 cup dark brown sugar
- 1/3 cup olive oil
- 1/4 cup honey
- 4 cups old fashioned oats
- 1/2 cup pumpkin seeds
- 1/2 cup pecans chopped
- 1/2 cup lightly salted sunflower seeds
- 1/4 cup roasted unsalted almonds chopped
Instructions
- Preheat oven to 300°F. Line large rimmed baking sheet with parchment paper.
- In a 6-qt stock pot combine dark brown sugar, olive oil, and honey. Warm over low heat just until sugar dissolves. Turn off heat.
- Stir in oats, pumpkin seeds, pecans, sunflower seeds, and almonds to evenly combine.
- Spread mixture evenly on prepared baking sheet. Bake approximately 35 minutes, stirring several times. Granola should be lightly golden.
- Remove from oven, if desired, stir in dried fruit. After cooling approximately 7 minutes, stir to break up chunks. Cool to room temperature before storing in air tight container.
